Say goodbye to classic chicken nuggets and discover our lion’s mane mushroom nuggets: crispy, meaty, and full of flavour… 100% plant-based, 100% delicious!
Ingredients
200 g lion’s mane mushrooms
2 beaten eggs
½ cup panko breadcrumbs
4 tbsp BBQ seasoning of your choice
Preparation
Preheat the air fryer to 190°C (375°F).
Separate the mushrooms into bite-sized pieces and slightly flatten one side for optimal cooking.
In a bowl, whisk the eggs. In another bowl, pour the panko breadcrumbs.
Coat each piece of lion’s mane mushroom in the egg mixture, then in the panko, and sprinkle with BBQ seasoning.
Place the nuggets in the air fryer basket in a single layer.
Cook for 11 minutes, flipping the nuggets halfway through for even browning.
If desired, brush the nuggets with BBQ sauce before serving.
