Oyster Mushroom Souvlaki

With their tender and slightly fibrous texture, our oyster mushrooms are perfect for grilling. Marinated, roasted, or seared over high heat, they develop rich flavors reminiscent of Mediterranean-inspired dishes, offering a gourmet, vegetarian, and character-packed alternative.
Ingredients
200 g grey oyster mushrooms
¾ cup Greek yogurt
3 cloves garlic, chopped
3 tbsp olive oil
1 tbsp soy sauce
2 tsp dried oregano
½ tsp smoked paprika
Juice of one lemon
For serving
2 pita breads
Tzatziki
Feta
Red onion
Arugula
Or anything you love
Preparation
In a large bowl, mix together the yogurt, garlic, oregano, lemon juice, soy sauce, olive oil, and smoked paprika to create the marinade.
Separate the oyster mushroom caps from their clusters, then add them to the marinade, ensuring they are well coated. Let them rest for at least 15 minutes so they can absorb all the flavors.
When the mushrooms are ready, thread them onto skewers, pressing them gently to ensure even cooking. You should get about two generous skewers.
Heat a griddle or barbecue over medium-high heat, then cook the skewers for about ten minutes on each side, until nicely golden and slightly crispy.
Serve them in a pita topped with tzatziki, crumbled feta, thinly sliced red onion, arugula, and a squeeze of lemon juice for a fresh, flavorful, and perfectly balanced result.
