Perfect for discovering this delicate and flavourful mushroom. Quick to prepare, they highlight the tender texture and umami taste of oyster mushrooms.
Ingredients
200 g oyster mushrooms
¼ cup chicken, vegetable broth, or white wine
1 tbsp olive oil
3 tbsp butter, divided
3 garlic cloves, minced
½ tsp Dijon mustard
½ tsp lemon juice + zest of ½ lemon
½ cup freshly grated Parmesan
2 tbsp fresh chopped parsley
Salt and freshly ground pepper, to taste
Preparation
Bring a large pot of salted water to a boil and cook the pasta al dente according to the package instructions.
In a skillet, heat the olive oil and 1 tbsp of butter over medium-high heat. Add the mushrooms and sauté until caramelized, about 8 to 10 minutes.
Mix the remaining butter with the garlic and Dijon mustard, then add the mixture to the mushrooms. Cook for 1 minute.
Pour in the broth along with the lemon juice and zest, and let simmer for 1 minute.
Remove from heat, stir in the Parmesan and parsley. Add a little pasta cooking water, then toss with the pasta. Season with salt and pepper, and serve immediately.
