Oyster Mushroom

Behind every grey oyster mushroom lies our passion for fresh, local, and sustainable mushrooms.

DISCOVER OUR STORY

Why grey oyster mushrooms elevate every dish.

With its fleshy, almost meat‑like texture, the grey oyster mushroom is incredibly versatile: pan‑seared, fried, shredded, or grilled, it absorbs flavors beautifully while remaining tender.

Its mild, slightly earthy and umami flavour, enhanced by a subtle woody note, makes it a delicious plant‑based alternative and a good source of protein.

Our tips to keep your mushrooms fresh longer

To make the most of your oyster mushrooms, here are a few simple tips:

  • Keep them refrigerated: store them in the vegetable drawer, ideally in their original packaging or in a paper bag.

  • Use them quickly: they will stay perfectly fresh for 3 to 5 days in the refrigerator.

With these simple tips, your mushrooms will be tender, flavourful, and delicious—ready to elevate any dish!

What if the forest could grow… indoors?

At Leciel, we recreate the ideal conditions to grow oyster mushrooms, a locally cultivated mushroom from Quebec. Humidity, temperature, light, and airflow are carefully controlled to mirror the forest’s natural rhythm. In this perfectly managed environment, our lion’s mane mushrooms fruit as they would on the forest floor—yet with the precision that technology allows. The result: a fresh mushroom with a delicate texture and a well‑developed umami flavour, harvested at peak maturity.

A Sustainable and Responsible Production

Our oyster mushrooms grow on wood residues sourced from local sawmills, valuable materials to which we give a second life. By diverting them from landfills, we reduce waste while making better use of local resources. This sustainable approach allows us to cultivate local mushrooms year‑round, with a reduced environmental footprint. It’s a concrete way to grow differently—respecting nature, Quebec’s resources, and generations to come.

Grown Here, To Nourish Our Community.

At Leciel, growing Quebec‑raised oyster mushrooms is much more than a production method. It’s our way of contributing to Quebec’s food autonomy while offering fresh, local, and accessible food. Producing locally, year‑round, with intention and pride is at the heart of our mission. Nourishing our community with fresh mushrooms grown in Quebec, this is our way of thinking big.
