REIMAGINED BLT WITH KING OYSTER MUSHROOM BACON

Bacon has never been this veggie! Our shredded oyster mushrooms turn crispy and ultra-flavorful, perfect with tomatoes, arugula, and mayo-pesto. An irresistible BLT in every bite!
Ingredients
200 g king oyster mushrooms, very thinly sliced lengthwise
3 tbsp vegetable oil
1 tbsp maple syrup
1 tsp smoked paprika
1/2 tsp salt
Pepper to taste
For serving
4 slices of bread
2 tbsp mayonnaise
2 tbsp pesto
1/2 cup arugula
1–2 pink tomatoes, sliced
Salt and pepper
Preparation
In a shallow bowl, mix all the ingredients, then add the mushrooms, coating them well with the sauce. Cover and let marinate for 10 minutes at room temperature.
Cook the mushrooms in a single layer in a preheated air fryer at 200 °C (400 °F) for 8–10 minutes.
Meanwhile, slice the tomatoes. Mix the mayonnaise with the pesto. Spread this mixture over 2 slices of bread, then layer the tomato slices on top. Add the mushrooms, then top with half of the arugula. Close the sandwich with the remaining slices of bread. Cut in half and serve immediately.
