This lion’s mane mushroom steak recipe is so meaty and realistic, you have to taste it to believe it!
Ingredients
400 g Lion’s Mane Mushrooms
100 ml Beet Juice
2 tbsp Maple Syrup
2 tbsp Olive Oil
2 tbsp Soy Sauce
1 tsp Smoked Paprika
1 tsp Miso Paste
Preparation
Mix all the marinade ingredients in a bowl or a plastic bag, except for the mushrooms. Set aside.
In a hot skillet over medium-high heat, add a drizzle of oil. Place the mushrooms, stem side down, and cook for 1–2 minutes. Place a second skillet on top or use a meat press, then gently press to release the water, gradually increasing the pressure. Wipe off any excess water and add a little oil if needed. Browning and pressing on the first side takes about 5–6 minutes.
Flip the mushrooms, add a drizzle of oil, press firmly, and cook for an additional 5 minutes, until golden, caramelized, and reduced to less than half their original thickness. Remove from heat and let them soak in the marinade for 30 minutes to 2 hours.
Then, sauté the marinated mushrooms in a little olive oil over medium-high heat for 1–2 more minutes, until both sides are lightly charred and crispy.
You can adjust the final thickness according to the pressure applied.
